Mediterranean Chickpea Salad Sandwiches

Ingredients
  • 15-oz can chickpeas, drained and rinsed
  • 1/2 cucumber, peeled and finely chopped
  • 1/4 cup jarred roasted red peppers, finely chopped
  • 8 kalamata olives, finely chopped
  • 1/8 red onion, minced
  • 1/4 cup cilantro, minced
  • juice of 1/2 lemon
  • 1 Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • salt and pepper to taste
For serving:
  • 2 of your favorite buns (or use English muffins!)
  • spinach leaves
Instructions
  1. Placed chickpeas in a food processor and puree for about 10 seconds, until finely chopped. The goal is not to make them into a paste or flour, but just to mash them more thoroughly than you could by hand.
  2. Add the remaining ingredients to the food processor and pulse a few times to combine. Add more salt and pepper to suit your tastes.
  3. Spoon the chickpea salad onto buns and top with spinach. Enjoy!
