Super Sweet Spinach Salad

Yields: 4 side salads
Ingredients
For the maple glazed pecans:
  • 1 cup raw pecans, coarsely chopped
  • 1 Tbsp maple syrup
For the dressing:
  • juice of 1 orange (about 1/4 cup)
  • 2 Tbsp raspberry balsamic vinegar
  • 1 Tbsp olive oil
  • pinch of pepper
  • salt to taste (I didn't use any)
For the salad:
  • 4-6 oz. baby spinach
  • 1/2 red onion, sliced
  • 1 cup mandarin oranges pieces (from a can of mandarin oranges, drained)
  • 1/2 cup dried cranberries
Instructions
  1. Preheat oven to 350. In a small bowl, mix together pecans and maple syrup. Spread on a baking sheet and toast until fragrant and beginning to brown, about 6-8 minutes depending on your oven.
  2. Whisk together dressing ingredients. Set aside until ready to serve.
  3. To assemble salads, lay a bed of baby spinach. Top with onion (do not skimp on the onion!), oranges, cranberries, and pecans. Serve with dressing. Enjoy!
