Nutted Wild Rice

Ingredients
  • 4 cups vegetable stock or water
  • 1 cup (6 oz) uncooked wild rice, rinsed
  • 1 cup pecan halves, lightly toasted and roughly chopped
  • 1 cup golden raisins
  • grated rind of 1 orange
  • juice of 1 orange (about 1/3 cup)
  • 1/4 cup chopped fresh mint
  • 4 green onions, thinly sliced (white and green parts)
  • 2 Tbsp olive oil
  • 1/2 tsp to 1 tsp kosher salt
  • ground black pepper to taste (I used 1 tsp)
Instructions
  1. Bring stock or water to a boil in a small pot. Add wild rice and return to a boil. Cover, reduce heat, and simmer until tender, about 45 minutes. Drain rice and place in a large bowl.
  2. Add remaining ingredients to the rice and stir. Adjust salt and pepper as necessary. Allow to sit for 2 hours to let the flavors develop. Serve at room temperature.
