Mimosa Pancakes

Ingredients
  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 2 Tbsp sugar
  • 1/2 tsp kosher salt
  • 1 cup champagne (I used prosecco)
  • 1/4 cup milk (I used almond milk)
  • 1 egg
  • 2 Tbsp butter, melted
  • zest of 1 orange (about 2 Tbsp)
Instructions
  1. In a large bowl, sift together the flours, baking soda, and baking powder. Stir in the sugar and salt.
  2. In a separate bowl, whisk together the champagne, milk, egg, butter, and orange zest.
  3. Gradually pour the wet mixture into the dry mixture. Whisk until just combined. Let sit for 10 minutes to thicken up.
  4. Melt a small pat of butter in a griddle or non-stick pan over medium-low heat. Drop a scoop of the batter on. Cook for several minutes, then flip and cook until done on both sides. Repeat with remaining batter. (You may have to reduce the stove temperature as you go to avoid burning the last few pancakes.)
  5. Serve and enjoy!
