Sun Dried Tomato and Gorgonzola Salad

Ingredients
  • 1/2 cup sun dried tomatoes (not packed in oil)
  • drizzle of olive oil
  • salt and pepper
  • 1/4 cup loosely packed basil leaves
  • juice of 1/2 lemon
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • your favorite greens
  • 1/3 cup crumbled gorgonzola cheese
  • 1/3 cup walnuts
  • 1/4 cup thinly sliced red onion
Instructions
  1. Place sun dried tomatoes in a bowl. Cover with warm water and soak for 10 minutes. Drain and slice. Toss with a drizzle of olive oil and a sprinkle of salt and pepper. (If you are using tomatoes that are packed in oil, simply drain and slice.)
  2. Make the dressing by blending together the basil, lemon juice, olive oil, balsamic, and honey.
  3. To make the salad, top a bed of greens with the sun dried tomatoes, gorgonzola, walnuts, and red onion. Pour on the dressing and toss to coat. Serve and enjoy!
