Kale & White Bean Tacos with Chipotle Fruit Salsa

Yields: about 10 small tacos to feed 2-3
Ingredients
  • 1 tsp olive oil
  • 1/2 of a large red onion, diced
  • 14-oz can cannellini beans, drained and rinsed
  • 1/4 cup water
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 4-6 leaves curly kale, rinsed and sliced into ribbons
  • corn tortillas, warmed
  • chipotle fruit salsa
Instructions
  1. Heat olive oil in a large non-stick pan over medium heat. Add the onion and saute until beginning to soften, about 5 minutes.
  2. Add beans, water and spices. Stir together and cook just until beans are heated through.
  3. Add kale. Toss with bean mixture until kale is bright green and beginning to wilt. Taste and adjust spices as necessary.
  4. To serve, spoon kale and bean mixture onto warm tortillas. Top with chipotle fruit salsa. Enjoy!
