Butternut Squash Pasta Sauce

It is quite the orange week around these parts – food-wise, at least. On Monday we had sweet potato salsa, and today we’re making use of my other favorite orange vegetable, butternut squash. Aaaand Friday will bring more squash! I guess I just can’t get enough.

Will I turn orange by the end of the winter? Most likely.

As an aside, orange is actually one of my least favorite colors (except when it comes to food!), but I briefly considered using it in our wedding when we were planning it for October. Mostly because, in addition to loving orange veggies, I apparently love orange flowers. I will say, though, that changing venues and ending up with a September date was quite a relief. Better weather and no need to have any sort of fall theme! I’m one of those girls who has dreamed about her wedding since she was little (ashamed to admit it), and a fall wedding just wasn’t what I’d envisioned. Nix on the orange!

September is quite far away, of course, and in the meantime I will stuff myself with orange foods. Mmmm.

Betcha didn’t think I’d have a recipe for you today, did ya?

I’m as surprised as anyone. But I’m also happy to be back in the kitchen so I can share some more healthy recipes with you.

Chipotle Honey Sweet Potato and Black Bean Salsa

I love the holidays, and I definitely feel recharged after taking a nice long vacation and spending time with family. Buuut I have to say I’m also glad to be getting back to my normal routine, a.k.a. not eating my weight in cookies every day of the week. I love eating cookies! But after a while, my body begs for a break.

And if that break comes in the form of chips and salsa? I’ll take it.

Happy 2014 + Wedding Planning Update

Oh hey there! Remember me?

To say that I’ve been MIA would be an understatement. I have not been doing so much cooking lately. Instead, I’ve been doing a lot of traveling, hanging out with family, and wedding planning. Emphasis on the wedding planning. Oh, and also emphasis on the blabbing about my wedding planning. Sorry, family and friends – it happens.

The wedding stuff has been… interesting, and maybe not as easy-breezy as I originally thought, especially remotely. It is a ton of fun, though, and I am loving (almost) every second! Can I give you a few updates? Oh good.

2013 Recipe Fails

It’s the moooost wonderful tiiiime of the year. And that’s because it’s time for the post where I get to show you all how much I f#*%!ed up in the kitchen this year.

We can all share a good laugh and I’ll pretend like this isn’t a blow to my ego. Secretly I’ll be sobbing behind my laptop as I look at each one of these images and relive the hours of effort I put into making this totally disgusting food. And this obviously isn’t even half of the stuff that went wrong behind the scenes of this blog over the past twelve months; these are just the dishes I thought were worthy of documenting… before I tasted them, that is.

Without further ado:

2013 Recipe Fails

Let’s start with birthday cupcakes gone wrong. I thought it would be a good idea to make “brownie mosaic” peanut butter cupcakes (inspired by this brownie mosaic cheesecake) with chocolate frosting. Um… Too. Much. And if I say that, it’s really true. They tasted like I had closed my eyes in the baking aisle and just dumped the first five boxed mixes I touched into a bowl together. Not good.

I recently decided I wanted to try to make a quinoa chocolate bar. And right after that, I saw just such a thing at the grocery store! Talk about serendipity; of course I had to buy it… you know, to see if my efforts would be worth it and everything.

Well, as you can probably tell from the fact that I made three different variations, stuffed my face with them all of last weekend, and am now posting about them… the quinoa chocolate bar was good. VERY good.
