Blueberry Almond Chia Smoothie

April 15, 2013 by Erica

Blueberry Almond Chia Smoothie

Spontaneity: not my thing.

Lists: totally my thing.

The way I get excited for things is by planning them. Vacations, parties, meals, you name it – planning is just my way of looking forward to something.

Come to think of it, that’s probably one of the reasons I like blogging so much.

This weekend, Nate and I have plans to go down to Moab, UT, one of my favorite places. Moab is home to Arches and Canyonlands National Parks, as well as an adorable downtown and lots of mountain biking, climbing, and running. I’ve been there a few times, but only once with Nate, and that was for about 24 hours. I’m excited to go back with him and show him Arches and Canyonlands, both of which are suuuuper beautiful and make me so happy to live in this state.

I’m starting to get excited for the weekend as I plan out which hikes we’re going to do, where we’re going to eat, what I should pack, etc. I haven’t made any lists or strict schedules for us yet… but you know, there’s still time. :)

Strawberry Spinach SunButter Smoothie

March 29, 2013 by Erica

Strawberry Spinach Sunbutter Smoothie

There’s nothing like a mug of strong French press coffee and a big, delicious smoothie to start your day off right.

Oh, and some birthday roses from your sweetie… and a couple smooches, too.

But sweet boyfriends aside, smoothies are the breakfast treat I’ve found myself looking forward to most lately. There are just endless combinations, and the fact that they’re sweet and frosty just makes them so much fun. Recently, I’ve been obsessed with making mine with sunbutter. Although I’m not a huge fan of sunbutter plain – as a spread, I prefer peanut butter – I love it in smoothies, especially with spinach, for some reason. It’s what makes this smoothie extra special!

Strawberry Spinach Sunbutter Smoothie

Speaking of spinach: I don’t really make green smoothies, but I do like adding spinach to my fruit smoothies. Especially if there are berries involved, the spinach doesn’t change the flavor much, although it does turn your smoothie kind of garbage-colored. (I considered naming this post “strawberry sunbutter garbage-colored smoothie,” but something about that just didn’t seem so appetizing… not sure why.) Anyway, it’s the flavor that counts, and the fact that you are eating green stuff for breakfast!

These are also my favorite way to recover from hot summer long runs. Those are a few months away at this point, but I’m looking forward to them lots! I have been dying a long, slow death by treadmill this winter. It has just got to stop.

Strawberry Spinach Sunbutter Smoothie

If you look at the ingredient list below, you’ll see an ingredient that looks a little out of place: apple cider vinegar. Weird, right? Well, I took Faith’s advice recently and added just a tiny bit of apple cider vinegar to my smoothie. And it totally made it more flavorful! So, odd though it may seem, definitely don’t skip the vinegar.

I like my smoothies so thick that they have to be eaten with a spoon. If you prefer a more slurpable smoothie, you could sub the Greek yogurt with more almond milk or just add another half cup of almond milk or water.

Enjoy this garbage-colored, I mean, green smoothie!

St. Patrick’s Day Guinness Milkshakes

March 11, 2013 by Erica

Guinness Milkshakes

Celebrating St. Patrick’s Day has never been my forte, despite the fact that I am from Boston and partly Irish. I’m sure that’s blasphemy to some of you, so let me explain: I’ve never been a fan of Bailey’s, and green does NOT compliment my skin tone. To add to that, St. Patty’s weekend also often coincides with my birthday weekend, meaning that I’m expected to drink Bailey’s and wear green, and call it celebrating my birthday. No fair.

Luckily, no one in Utah cares about St. Patrick’s Day. Like literally no one. Also, my birthday’s not til next Thursday, so no shared weekend this year, phew. So I’m free to celebrate St. Patty’s as I choose, and I choose Guinness milkshakes!

Does a beer milkshake seem weird to you? Lay those fears aside. I can’t speak for other types of beer in milkshakes (for example, IPA just doesn’t seem like it would taste very good with ice cream), but Guinness is DELICIOUS in these. Even though I’m not usually a Guinness fan. Its nutty and bitter flavors complement the sweet ice cream perfectly.

Speaking of the ice cream, I discovered something really inconvenient while making these milkshakes. And that is that I do in fact like vanilla ice cream. I REALLY like it. I’m not sure why I thought I didn’t for the past 25 years. It is yummyyyyyy and of the quart I bought to make these milkshakes, I’m ashamed to admit how much little of it is now left.

You can also make these with chocolate (or maybe even coffee?) ice cream if vanilla isn’t your thing. I tried chocolate too (obviously) and although I ended up surprising myself by preferring the vanilla, the chocolate was certainly not bad.

So, no green food coloring around here for St. Patrick’s Day. No Bailey’s and no boiled dinners. Just a 2-ingredient dessert that even skeptics of Guinness and vanilla will love.

I will probably end up wearing green, though.

Chai Spiced Hot Chocolate

January 11, 2013 by Erica

Chai Spiced Hot Chocolate | Coffee & Quinoa

Have you ever had a “dirty” chai latte?

Well, this is not that.

But a dirty chai latte, I learned the day after Christmas, is a chai latte with a shot of espresso, and is an “off-the-menu” item at Starbucks. I tried a friend’s recently and it was delicious. Not sure I’ll be ordering it any time soon, though, because how awkward would it be to include the word “dirty” in your Starbucks order? What if the cashier didn’t know what you were talking about? Or… misinterpreted it? I feel like Utah is a place where that would happen.

Anyway, chai spiced hot chocolate is kind of the inverse of a dirty chai latte, and for chocolate lovers, but just as brilliant. Also, it contains no potentially confusing adjectives, which is key when you’re ordering it/telling other people about it.

Chai Spiced Hot Chocolate | Coffee & Quinoa

This is inspired by the Williams-Sonoma chai-spiced hot chocolate that my aunt and uncle (hi Aunt Kathy!) got me for Christmas. It was just the perfect thing to warm up with after skiing! It had never occurred to me that two seemingly distinct hot beverages, tea and hot chocolate, could be combined. Two of your favorite things, right?

But I suspect that not everyone will run out to Williams-Sonoma to buy this “premium” (quoting from the website now),  “mellow-bodied,” “perfectly balanced” hot chocolate. So I came up with a semi-homemade version (Sandra Lee-style) to share with you.

Chai Spiced Hot Chocolate | Coffee & Quinoa

And despite my pictures here with fancy spices, none of those are necessary. A chai tea bag and some Hershey’s cocoa powder, people. Semi-homemade. I was just so proud that I had so many whole spices sitting around that I had to include them.

I feel obliged here to link to something hysterical, if you haven’t seen it already: The Hater’s Guide To The Williams-Sonoma Catalog. It had me hunched over my desk squeaking I was laughing so hard. This “world-class” hot chocolate is not even in the same category as the absurd Williams-Sonoma products and descriptions featured there. If you’ve ever looked at their catalog and shouted at your roommate “who the hell BUYS this stuff?!” you should check it out. Although if you are intrigued by and end up purchasing the “reclaimed rustic chicken coop” for $759.95, I’m sure your roommate will understand.

Chai Spiced Hot Chocolate | Coffee & Quinoa

Chai Spiced Hot Chocolate

Makes 2 1-cup servings

Inspired by Williams-Sonoma

Ingredients:

2 cups plain unsweetened almond milk

1 chai tea bag (I used Tazo)

1/4 cup Hershey’s unsweetened cocoa powder

2 Tbsp sugar

1/8 tsp vanilla

Instructions:

In a heat-proof dish (such as a Pyrex glass measuring cup), microwave almond milk until hot, about 4 minutes, stopping and stirring every minute or so.

Remove from microwave and steep the chai tea bag in the almond milk for about 2 minutes. Discard tea bag.

Stir in cocoa powder, sugar, and vanilla. If necessary, microwave for an additional minute to dissolve sugar.

Whisk or blend to get it nice and frothy, being careful not to spill. (You may have to transfer to a different dish/bowl for this.) Pour into two small mugs to serve.

Enjoy!

Time:

6 minutes

Pomegranate Ginger Bellinis

December 31, 2012 by Erica

pomegranate ginger bellinis | Coffee & Quinoa

Here is an adult beverage for you, just in time for New Year’s Eve.

It comes with a secret: I don’t really like hard alcohol.

Shocking? Sorry. There are exceptions. Margaritas, bloody marys, even the occasional mojito… I like those. But for the most part, I’m a beer and wine kinda girl. Which is convenient, since I live in Utah where the liquor stores close at 7 pm and the grocery stores only sell 3.2% beer. Nate and I have gotten QUITE used to weak beer.

Anyway, that’s why I like bellinis, although I did have to plan ahead and buy some prosecco before 7 pm. (I don’t think these would be good with Utah beer.) They’re pretty much my ideal cocktail, since they look pretty, are easy to make (and don’t involve juicing 1,000,000 limes), and have nothing stronger than some Italian sparkling wine. Oh, did I mention that THEY ARE SO PRETTY? The colorful food kick continues and pomegranate is going to be my new favorite thing.

I also have to mention that, as the Italian cousin of the mimosa, these could totally be breakfast. So if you already have your drinks planned for tonight… get to the wine store before 7 pm and then make these for your New Year’s Day brunch.

Pomegranate Ginger Bellinis

Makes about 5 cocktails

Adapted from Epicurious

Ingredients:

1 cup pomegranate juice

1 heaping Tbsp peeled and chopped fresh ginger

1 Tbsp sugar

1 bottle prosecco (I used Zonin)

Instructions:

In a small saucepan, bring pomegranate juice, ginger, and sugar to a simmer over medium-high heat. Stir to dissolve sugar. Continue to simmer until liquid is reduced to 1/3 cup, about 10 minutes.

Remove from heat and strain into another container. Refrigerate (or put in the freezer if you’re in a hurry) until ready to serve. If you like, you can store the syrup in the fridge for several days.

When ready to serve, pour about a tablespoon of the pomegranate syrup into each glass and top with prosecco. If the syrup and prosecco do not readily mix, stir or carefully pour into a kitchen glass and then back into the serving glass to mix.

Time:

20 minutes
