Portobello Quinoa Wraps with Cilantro Pepita Pesto

August 4, 2014 by Erica

Portobello Quinoa Wraps with Cilantro Pepita Pesto

This weekend I:

1) Went on a hike

2) Was lucky Nate didn’t leave me on the mountain

3) Had my second wedding dress fitting

4) Realized our wedding is NEXT MONTH

5) Spent an absurd amount on groomsmen’s ties

6) Cried laughing looking at the Instagram hashtag #swolebrahamlincoln (mostly that it exists and has 1200+ posts – WHAT)

7) Cooked all the food

8) OD’ed on pesto

9) Ate more pesto

Was that a good enough segue to pesto? I hope so, because that’s what I want to talk about. That and the wedding… naturally.

I could make all kinds of claims about this pesto. It’ll cure what ails ya. It’ll make you look like #swolebrahamlincoln. It’ll win you a million dollars so you can buy all the ties in the world. Mostly though, this pesto is deeelicious and so unexpected, because it’s made with cilantro!

Teriyaki-Glazed Tofu Lettuce Cups

Teriyaki-Glazed Tofu Lettuce Cups

Well well well, what do we have here?

Lettuce filled with tofu, that’s what. Can you get more vegan?

Well, maybe if I had also incorporated kale and quinoa. Then these could be eeeven more granola.

As it is, I feel like just the idea of tofu turns some people off. But no longer, because just LOOK at this tofu:

No matter your general feelings on tofu, come on. This stuff looks good.

This is definitely a tofu recipe for tofu haters.

Chickpea Caesar Salad Wraps

Chickpea Caesar Salad Wraps

Hello hello – it’s been a while!

I hope you’ll excuse my absence. {Insert sheepish face here.} Sometimes the summer weather just ruins all your cookin’ plans, ya know? Like, you really wanted to roast pans upon pans of veggies, then you realized that you could probably roast them on the sidewalk because it is SO HOT OUT and you have no business adding to that heat by turning on the oven. So instead you order a glass of sauvignon blanc on a restaurant patio and leave all those veggies hangin.

I hope I’m not the only one who has been slacking on the cooking front to enjoy the summer weather. It is so worth it! Those roasted veggies can SO wait til fall… and in the meantime, that bottle of white wine is calling your name. It’s nothing to be ashamed of. In fact, I’m encouraging it with quick and easy meals like this!

Kale & White Bean Tacos with Chipotle Fruit Salsa

June 5, 2014 by Erica

Kale and White Bean Tacos with Chipotle Fruit Salsa

Let’s talk about being busy.

Busy-ness: I never thought I was one of those people that liked it. You know, the kind of person that fills their calendar to the brim with commitments until they have no room to breathe. I mean, I guess that’s everyone to a certain extent these days (and it’s certainly a hot topic), but frankly, I’m just too lazy to be one of the extreme cases.  I like to have time to myself; I hate the feeling of a million demands on me and my time.

But lately, I’ve started to think that maybe I’m more like those overcommitters than I thought. I’ve noticed that being busy makes me feel important and that, actually, I have no happy medium between busy-ness and boredom. If I’m not crazy-stressed, I’m automatically bored. What! How can this be?

Mushroom Larb (Thai Mushroom Lettuce Wraps)

Mushroom Larb

Lately…

I cannot stay awake in shavasana for.the.life.of.me.

I’m considering making a Warby Parker purchase and doing the glasses thing. (Thoughts???)

I can’t believe that I graduated from college 6 years ago this weekend.

It feels like summer and I am getting excited for summer travel plans!

I registered for a July half marathon and am hoping to PR by dropping some lbs. We’ll see!
