Green Quinoa Salad with Asparagus, Avocado and Kale Pesto

Do I have an exciting post for you today!

You may remember my friend Julia of The Roasted Root. Julia is a health food maven and blogger extraordinaire. She’s known for her gluten-free goodies, savory stews, and kick-ass kombucha, but most of all, the girl can roast a mean root. Not a beet, carrot or tuber gets by her without being turned into something fabulous. Julia is very clearly inspired by vegetables, and so I’m over-the-moon excited about the release of her second cookbook, Let Them Eat Kale!

I can’t think of anyone more perfect than Julia to spend months in the kitchen with countless bunches of beautiful leafy greens, chopping, massaging and braising to her little heart’s content. And now you and I get to reap the benefits. Julia was sweet enough to send me a copy of her book to review (plus another to give away!). Let’s just say I think there are splotches of drool on my copy.

Blueberry Banana Forbidden Rice Pudding

Summer berry season is ON.

These glorious juicy little berries are the #1 (food-related) reason I look forward to summer. Have I said that before… perhaps about tomatoes? peaches? basil? Blasphemy. Berries are my all-time favorite summer food.

And just because it’s fun, here are my top non-food-related reasons to look forward to summer: Dresses (my credit card bill has been insane lately, and Anthro and Banana are to blame), Martha’s Vineyard (headed there in a month!), and just generally the warm weather. If you ask me, there’s no better feeling than walking out of the house without taking the time to stop and bundle up first. I think those that live in a warm climate year-round take that feeling for granted, but I most certainly do not! Well, not usually. I’ll be complaining about the heat before you know it… so just remind me that I always prefer warmth to cold!

Blueberry Banana Forbidden Rice Pudding

I also love how easily those summer dresses pack into a suitcase. Today I’m headed back to Boston to do girly wedding planning stuff with my mom, and I threw all my clothes for the long weekend into a carry-on with plenty of room to spare. If you know me, you know that is quite the feat! Girlfriend does not pack light. I mean, I haven’t gotten to the toiletries yet – and I’m pretty sure those don’t get skimpier in the summer – but I think I’m going to get by with my smallest carry-on. Summer dresses FTW!

So since I mentioned it, can I just derail this pudding parade to talk about wedding stuff for a second? OK good. Because this weekend we get to do the following: Cake tasting. Florist meeting. Hair and makeup trials. Eeek!! Maybe we’ll even have to test out a few signature cocktail recipes. Life is tough, you guys. I cannot wait!

P.S. Am I really flying across the country just to get my hair done? Shhhh. Let’s get this pudding parade back on track.

Chickpea Caesar Salad Wraps

Hello hello – it’s been a while!

I hope you’ll excuse my absence. {Insert sheepish face here.} Sometimes the summer weather just ruins all your cookin’ plans, ya know? Like, you really wanted to roast pans upon pans of veggies, then you realized that you could probably roast them on the sidewalk because it is SO HOT OUT and you have no business adding to that heat by turning on the oven. So instead you order a glass of sauvignon blanc on a restaurant patio and leave all those veggies hangin.

I hope I’m not the only one who has been slacking on the cooking front to enjoy the summer weather. It is so worth it! Those roasted veggies can SO wait til fall… and in the meantime, that bottle of white wine is calling your name. It’s nothing to be ashamed of. In fact, I’m encouraging it with quick and easy meals like this!

It is definitely cherry season! Have you noticed huge displays of cherries popping up all over the place?

I am a sucker for big, beautiful displays of fruit. But even better, I recently realized that there are quite a few cherry trees in Salt Lake. Last week, multiple co-workers brought cherries into the office to share. And I couldn’t believe my luck on a neighborhood walk the other night when we happened upon a neighbor’s tree full of the ripest, juiciest cherries I’ve ever laid eyes on!

When do I get to move into a house with a cherry tree?! Based on the price of these little guys, I think I could pay June and July’s rent by selling one tree’s harvest alone.

Despite what you may be thinking, this recipe was not made with stolen cherries. I mean, I had to sample one from our neighbor’s tree, but I stopped there. As to whether or not I’m above taking a little walk back to accidentally shake down a branch… well, that’s still up for debate.

Sooo what do you do when a friend shares her cherry harvest with you? Well, you make margs, of course!
