Crispy Tofu Rice Bowls with the Best Thai Peanut Sauce

March 17, 2014 by Erica

Crispy Tofu Rice Bowls with the Best Thai Peanut Sauce

I’m about to be one of those people that is way too excited for a Monday.

You know… the ones who are bouncing around at 8 AM and draw a dark look from you because… Monday. Monday morning. Why so cheerful?

Well, thanks for asking. It’s actually because of this peanut sauce. {Insert ear-to-ear grin here.}

Crispy Tofu Rice Bowls with the Best Thai Peanut Sauce

I recently found myself on a quest to master a Thai peanut sauce recipe.

It started, as these things often do for me, with a restaurant dish. Specifically the peanut sauce at our go-to Thai takeout place. I am head over heels in love with that peanut sauce. They serve it as a salad dressing, as a dipping sauce for spring rolls, and as a sauce over steamed vegetables and rice. It is incredible and I bet you I’ve dreamed about it before. It’s not stretching the truth to say that I go there just for the peanut sauce.

Green Curry Stuffed Peppers

Green Curry Stuffed Peppers

Hello, and happy Monday to you!

Some recipes I have a lot to say about; others, not so much. This is one of the latter. The big story about this recipe is that a version of it has been on my idea list for quite some time – about a year – and when I got a massive amount of green peppers in my CSA box, I decided to finally try it out. It would have been almost irresponsible not to, you know? So… I made it.

The end?

Green Curry Stuffed Peppers

No, of course that’s not the end. That would leave you with far too many pictures of peppers and far too little of my sass for one day.

Although maybe it’s the peppers, not the sass, that you’re after.

Lucky for you, I’m not sure I have anything too sassy to say today. More pictures of peppers it is!

Vegan Thai Pizza

September 18, 2013 by Erica

Vegan Thai Pizza from Coffee & Quinoa

Today I come to you with a very important question: How do you eat your leftover pizza?

This is one of those conversations we’ve had about a million times in the lunchroom at work. The reason is that one co-worker, a New Yorker and self-proclaimed pizza snob, refuses to microwave his leftover pizza. He claims it makes the crust soggy and ruins the pizza. Another former co-worker was dead-set against eating cold any food that was supposed to be eaten hot, and found it completely unacceptable not to microwave leftovers. And soooo this same topic was hashed out and re-hashed whenever anyone brought pizza for lunch.

Me, I’m not against microwaving pizza. If I’m at home, I’ll use the toaster oven instead to crisp up the crust, but at work (or at home now that our toaster doesn’t seem to have survived the move) I’ll stick it in the microwave. I’d usually rather do that than eat cold food – eating a cold lunch in our over-air-conditioned office makes me sad. But I discovered that what I really like to do (and this goes for all leftovers, not just pizza) is to take one bite cold and then heat up the rest. I’m not sure why… maybe I’m just impatient? Or I like to take the opportunity to see what the dish tastes like cold, which I obviously didn’t have the night before when it was fresh? It’s a mystery, and it might be quirky, but that’s just what I like to do.

People have strong feelings about their pizza, clearly. I’m not too picky, other than my preferred reheating method – it all sounds good to me, and that’s probably the reason that I love the idea of this vegan Thai pizza. With neither tomatoes nor cheese, this is clearly not your typical New York- or Italian-style pizza. Instead, it’s made with a peanut butter sauce and veggies that roast to a crunchy perfection as it cooks. It’s actually kind of like the pizza version of my favorite noodle dish! I think it’s clear that we can add a peanut sauce to anything and I’m in love.

Fresh Lettuce Wraps with Peanut Dipping Sauce

July 29, 2013 by Erica

Fresh Lettuce Wraps with Peanut Dipping Sauce

Good morning!

Just like last week, I am drowning in lettuce.

Fresh Lettuce Wraps with Peanut Dipping Sauce

Well actually, I am on the beach, freed of my usual self-imposed responsibility to use up fresh produce as quickly as possible. So when I say I am drowning in lettuce, I really mean that my fridge at home is… probably very wilted lettuce at this point, because I’m sure no cooking is being done while I’m gone.

Fresh Lettuce Wraps with Peanut Dipping Sauce

Good thing I used up some lettuce last week by making these wraps! I am planning on wrapping everything in lettuce in the near future. You want pasta? Gotta wrap it in lettuce. Ice cream? I bet it will taste good with crunchy green exterior. Use that stuff up!

Thai Green Curry with Turnips and Summer Squash

July 24, 2013 by Erica

Thai Green Curry with Turnips and Summer Squash

Remember my CSA bounty I told you about on Monday?

Thai Green Curry with Turnips and Summer Squash

Well, hidden in there were also some adorable summer squash.

Lebanese squash (I think?), pattypan squash, green zucchini, and yellow zucchini.

Thai Green Curry with Turnips and Summer Squash

I only ever really buy zucchini and yellow crookneck squash, so I was really excited about the prospect of trying some new kinds. I mean, they all tasted the same, but I loved the colors. And that little pattypan squash is just too cute to be allowed!

Admission: I’ve been afraid to buy pattypan squash, despite their cuteness, because I didn’t know how to cut them up. This forced me to try, and it was super easy: just slice off the stem on top and bottom and chop into wedges. Duh.

Thai Green Curry with Turnips and Summer Squash

So I got a multitude of squash, but no turnips. I actually planned this meal before I picked up the box, assuming we’d get turnips again. Then, when we didn’t, I just bought some anyway. (Buying turnips… who am I?) They are definitely trying to give us a variety in our CSA box – cherries one week, apricots the next, etc. – which is nice, except when you’re learning how to cook with something new. I’m like, helloooo, now I’m brimming with turnip recipes! Bring on the turnips! Then nothing. But that’s OK, because I’m sure I’ll get my fair share of turnips and squash during the rest of the summer, and now I know the perfect dish to use them all up.
