Sun Dried Tomato and Gorgonzola Salad

I’m baaaack!

Back from Nashville, that is. I was there most of last week for work, and not gonna lie, I’m kinda still recovering.

Initially I was overwhelmed at the prospect of spending last Monday and Tuesday in client meetings in Salt Lake, then flying to Nashville for a conference the rest of the week. Especially after spending the previous weekend in Massachusetts! But actually, despite all the cross-country travel, the whole week was a total blast. I mean, when work consists of a few meetings in between buying cowboy boots and sitting in the second row at the Lady A concert, it’s hard not to have a good time.

And now, back to the real world… sigh. And back to some jeans that are a liiiiittle tighter than before All The Southern Food happened to my body.

I always (usually) have good healthy eating intentions when it comes to traveling. On this trip, I packed dinner and a snack for the plane, I refused the first round of Biscoff cookies, and I drank a huge bottle of water despite the drink vouchers in my purse.

And then.

Then I got to Nashville, where I’m pretty sure that even the “skinny eggwhite omelet” I ordered for breakfast the first morning was cooked in a vat of bacon grease. The same day, I went to a barbecue joint with my 8 male co-workers and ate a meal of macaroni and cheese, cornbread, and pickles (I think that was the “vegetable plate”). Oh and then there were the numerous free drinks that kept magically appearing. Let’s just say that on the flight back, the Biscoff cookies seemed like a health food.

Will I be recreating any Southern specialties for you? Um… not at the moment.

But believe it or not, this salad isn’t even my Monday attempt to make up for all of that. Nope, it’s just my recreation of the delicious Whole Foods salad I enjoyed on the flight to Nashville… again, before All The Southern Food.

Sun Dried Tomato Spread
I am feeling a little sentimental today.

This weekend I was back in Massachusetts for my bridal shower, which my mom hosted down at my parents’ beach house. Eleven women that I love spent the whole weekend showering me with affection, pouring me wine, and celebrating my happiness. It. Was. Wonderful.

There’s something about everyone I love – and live so far away from! – coming together to celebrate me that just gets me. I think it’s safe to say that I’m going to be quite emotional at my wedding. Good thing I picked bridesmaids’ dresses with pockets – someone better bring the tissues!

In addition to reminding me how lucky I am, this weekend also reminded me of several of my mom’s recipes I can’t believe I forgot. One orzo salad in particular that I hope to bring you soon… oh man is it good.

Food is definitely love in my family!

As a bridal shower present, Nate’s mom had sent a huge box of spices, salts and other goodies out to Salt Lake a few weeks ago, and a huge bag of sulfite-free julienned tomatoes was one of the ingredients I was most excited to cook with. I knew they were destined for this recipe as soon as I saw the big orangey-red bag of them.

Homemade Curry Ketchup

If you had told me last Monday that I would spend the weekend with a spoon in a jar of ketchup, I would have thought you were nuts. But if you had told me that come Saturday afternoon, I would have known you were telling the truth.

It’s pretty embarrassing, really, especially because I don’t consider myself a condiment person. I’m fine with ketchup and mustard, but I’ve never gotten too excited about them (before this)… and I’ve definitely never eaten them with a spoon (again, before this).

If you think it’s gross to eat ketchup with a spoon, yes. I agree. When we’re talking about ketchup with high-fructose corn syrup that comes out of a squeeze bottle. And for the record, never have I ever eaten that with a spoon. Gives me the chills just thinking about it.

This ketchup, though, is different. First of all, it’s homemade. With onions, spices, vinegar, and canned tomatoes. Real food! Second of all, it’s not just regular ketchup – it’s curry ketchup.

It seems like forever ago that I promised you my co-worker’s Bloody Mary recipe.  I hope you’ll forgive me for taking a while to get around to sharing, but I finally am! And I’m super excited about it, since I don’t often post anything boozy here. It’s always fun to shake things up a bit, right? And yes, having a brunch cocktail totally counts as shaking things up in my book. Number one partier right here!

Chipotle Bloody Marys

Not really.

If you know me, you know I’m not much of a hard alcohol lover. Though I mostly stick to beer and wine, I’ve broadened my horizons over the years, and the list of cocktails that I no longer find offensive is as follows: margaritas, mojitos, Bloody Marys. You can probably guess, given the fact that those three cocktails use three different liquors, that the alcohol is not what draws me in. Although I will say that a weak cocktail is pretty disappointing. Too bad I live in Utah, where there are laws that mixed drinks have no more than 1.5 oz of booze each. Don’t get me started on Utah liquor laws… That’s why we have to make our own Bloody Marys, people!

Fresh Corn Polenta with Tomatoes and Basil // Coffee & Quinoa

This polenta is my answer to the question, “What do I do with all this corn?”

We’ve been getting a ton of corn in our farm box recently. And by a ton, I mean three or four ears a week. I know, I know, that’s not that much. My dad, who hails from the Midwest, could (and regularly does) eat that in one sitting… but for two city kids who mostly just put corn in our salads (can we still be city kids now that we live in Utah?), that is a whole lotta corn. But something fortuitous happened last week: in the few minutes that I was driving home from picking up our farm box, NPR was playing a piece about heirloom corn and making delicious polenta with it. Ding ding ding! We have a winner. What an awesome coincidence.

To be honest, I didn’t even know you could make polenta from fresh corn – every recipe I’ve ever seen has involved cornmeal. Shows you how much I know! Turns out, you can make the most delicious polenta EVER when you start with fresh corn. And from the recipes I’ve seen, starting from scratch doesn’t add to the cooking time of “regular” polenta.
