Quinoa Fried Rice with Tofu

October 14, 2014 by Erica

Quinoa Fried Rice with Tofu | coffeeandquinoa.com

OK, even I am rolling my eyes at the title of this recipe. Quinoa fried rice with tofu – can we get any more hippity dippity healthy food blogger over here?

I’m sorry, but I’m that girl. The one who loves tofu and is using a Peruvian grain/seed to make an Americanized, pan-Asian dish.

Sue me. It’s delicious.

Carrot Farro Risotto

October 7, 2014 by Erica

Carrot Farro Risotto | coffeeandquinoa.com

Before the wedding, I developed a zucchini recipe for the blog… then ran out of time to post it. I thought about sharing it this week, but you know what? I’m just not feelin’ it. The zucchini ship has sailed. And although I hate to say it, I have finally moved on to fall foods. I almost can’t believe it, because I feel like every year I’m even sadder to see summer go. I think it has to do with the beautiful Utah weather. Other bloggers start with the pumpkin recipes when it’s still 80 degrees here, and I’m all noooooooo. But now that it’s October and I actually have to wear a jacket when I leave the house in the morning, we can talk about warm, comforting food.

But maybe I will sneak a zucchini in sometime soon, just for kicks.

Not that this is a fall dish per se, but to me, risotto is a very wintery food. I mean, am I going to stand at the stove stirring for ages in the summer? Nein danke. Only when it starts to get dark and chilly can I commit to risotto.

Aaaand We’re Back!

October 6, 2014 by Erica

Wedding Picture | coffeeandquinoa.com

Aaaand we’re back!

Since the last time I saw you:

I got married.

This blog got hacked.

I went on a mini-honeymoon to Martha’s Vineyard.

I ate my weight in seafood and risotto on Martha’s Vineyard.

…among other things. Let’s celebrate some of those things… and apologize for others.

First of all, I am SO sorry that this blog was blocked due to malware! Once I was done with some work travel, I remedied the issue as quickly as I could, and I’ll be more prepared going forward. Website issues are embarrassing. They’re like hanging a sign around your neck that says “I don’t know how to do this sh*t.” For real. And when it comes to backend site stuff… well, I’m no expert. I’m so sorry things got broken and the site was unavailable!

If you’re curious, I fixed things by signing up for Sucuri’s website antivirus and firewall protection packages. The antivirus package is a reactive solution, scanning your site for problems and providing technical support to clean them up when they’re found. The firewall is a proactive solution, implemented to make sure malicious code doesn’t get installed in the first place.

Site security is a bigger deal than I thought, and I regret not getting something set up sooner. Sucuri is relatively affordable and their response times are super speedy, so I highly recommend it if you’re looking for a similar solution!

OK, that was no fun. Can we talk about the wedding?!

It will still be at least a month before we get the pictures back from the photographer (with the exception of one at the top of this post!), so I’ll wait to share a detailed wedding recap until then. But I just have to tell you a little about our day, because it was by far the best and happiest day of my life so far.

Our wedding was absolutely perfect. The weather was beautiful, all of our vendors were AWESOME, and everything went more smoothly than I would have thought possible. Can you believe the only snafu of the whole day was that Nate realized he didn’t have cuff links, and his groomsmen had to buy him some before the ceremony? Not exactly an emergency. I was expecting a wonderful and happy day, but I think I was also expecting a bit of stress. It was emotional, to be sure – I shed my fair share of tears before, during and after the ceremony! – but the entire day was pure happiness.

I’m going to have to repeat all of this again once I have pictures for you, so I don’t want to say too much. In short, everything turned out even better than I could have imagined. I was in love with my dress, hair, and make-up… and of course having hundreds of people telling me I looked beautiful all day didn’t hurt :) Nate looked so handsome in his tux, and so happy to be marrying me. The ceremony was short and personal. The venue was gorgeous and the food was DELICIOUS – obviously important to me! Our DJ was amazing and had everyone on the dance floor all night long. It was just hands-down the best party I’ve ever been to! So many of my married friends have expressed relief when their wedding was over, but I felt just the opposite. I cried when the DJ played the last song – I wanted to do it all over again! I felt so incredibly lucky to be marrying the man I love, surrounded by friends and family who were obviously so, so happy for us. There is no feeling like it. And it turns out being the center of attention wasn’t so bad after all :)

Sooooo now I’m Mrs. Krah! And Mrs. Krah has some catching up to do on recipe posting. I did get back in the kitchen this weekend and you can look forward to some tasty treats later this week. Also, I promise to spare NO wedding detail once I have the pictures! I hope they capture how magical the day was.

It’s been a few weeks, and I’ve missed this blog! Let’s get back into the swing of things, shall we?

Wedding Bells

September 18, 2014 by Erica

Well friends, this is it! We are getting married on Saturday!

I had planned to post another recipe for you this week, but in what’s become classic form for me the past few months, I ran out of time to write it up. I realized when we were on the plane on Tuesday that the photos were still on the memory card in my camera at home. Oh well, nothing like leaving everything behind to really make you unplug and enjoy the time with family and friends! And that’s exactly what we’ve been doing the past few days and plan to do for the next week. It’s glorious so far. So today I have just words… and in October I’ll have a zucchini recipe. Oops.

I have to say that everything has really come together for the wedding, and planning has been relatively stress-free overall. The beauty of planning a wedding close to my parents’ house and faaaar away from mine :) I successfully carried my dress on two Southwest flights (all bunched up in a carry-on – now time to get it pressed!), which seemed like the biggest hurdle as far as making sure everything was in order. Now that we’re home, we get to relax, eat seafood like it’s going out of style, and drink the many batches of beer my dad brewed for the occasion. I feel very spoiled!

Of course I’m anxious for everything to go smoothly the day of – sticking to the timeline seems like it will be the biggest challenge. I also hate being the center of attention, and am a bit nervous to be the one in the white dress. I know all eyes will be on me – kind of my worst nightmare! But the forecast is 70 and sunny, and I get to marry my best friend in front of all the people we love… even if I wish they weren’t focusing their attention on me. I guess it doesn’t get much better than that.

I will of course be sharing many, many pictures after the occasion! But for the next few weeks, while we get married, go on a “mini-moon” to Martha’s Vineyard, and I then fly right to Vegas for work meetings (boo), I’m planning on unplugging. I don’t have any posts scheduled to go up – there just wasn’t time! – so I will have to leave you hanging. BUT I promise to return with wedding pictures… and a zucchini recipe.

See you when I’m a Mrs.!

Spinach Salad with Strawberry Jam Vinaigrette

September 15, 2014 by Erica

Spinach Salad with Strawberry Jam Vinaigrette | coffeeandquinoa.com

Maybe I’m being too sensitive, but I feel repeatedly insulted by my dry cleaner.

It’s not just the prices, although those are absurd. It’s only recently that I started buying clothes (read: silk blouses) that I can’t just throw in my trusty Dryel bag to “dry clean,” and it’s hard to stomach more than $10 to clean a piece of clothing I already paid too much for.

But no, it’s the tags they attach to my clothing that get under my skin.

“It is our professional opinion that this stain cannot be removed.” That was attached to one of my blouses a few weeks ago, inducing immediate panic. I searched it high and low for a stain – I hadn’t known it had one! – and eventually came to the conclusion that they meant it had some underarm discoloration. Translation: It is our professional opinion that you sweat an ungodly amount. Well, sorry!

I wore that blouse on a Monday, and spilled coffee down my front, first thing. I wish I were kidding.

Most recently it was an Anthropologie sweater that I decided was worth dry cleaning because I was afraid I’d ruin it any way I attempted to clean it. It’s super delicate – a really loose weave, almost like a lace sweater, if that makes any sense – and I can barely put it on over my earrings without it catching. But when I picked it up from the dry cleaner it had a big bold tag that said “ATTENTION: DO NOT DRY CLEAN.” Might as well have said  “ATTENTION: LEARN TO READ” because when I checked the tag, sure enough, “do not dry clean.”

I guess that one’s my fault. But the chances of that “hand wash cold” foolishness happening? Roughly 0%. No, I take that back. Exactly 0%.

We’ll see what the dry cleaner has in store for me next time. Do they notice if I stretch stuff out?

In any case, may this not be the kind of Monday that starts with an insult and a coffee stain on your shirt. May this be the kind of Monday where you make a salad dressing out of jam!
