Wanna know something fun? We’re getting married in 99 days!

We’re in double digits – this thing is really gonna happen!

I mean, I think it’s gonna happen. As soon as I get my dress fitted, buy wedding shoes (I want peep toe flats!), pick out the menu, and buy us some plane tickets home. All of the planning is under control for the most part, but a few of the remaining to-do list items are pretty necessary for us to tie the knot. For example, I think it would be nice if we showed up for our own wedding, don’t you? Unfortunately, cross-country airfares seem to be plotting against us…

Let’s talk about being busy.

Busy-ness: I never thought I was one of those people that liked it. You know, the kind of person that fills their calendar to the brim with commitments until they have no room to breathe. I mean, I guess that’s everyone to a certain extent these days (and it’s certainly a hot topic), but frankly, I’m just too lazy to be one of the extreme cases.  I like to have time to myself; I hate the feeling of a million demands on me and my time.

But lately, I’ve started to think that maybe I’m more like those overcommitters than I thought. I’ve noticed that being busy makes me feel important and that, actually, I have no happy medium between busy-ness and boredom. If I’m not crazy-stressed, I’m automatically bored. What! How can this be?

I cannot stay awake in shavasana for.the.life.of.me.

I’m considering making a Warby Parker purchase and doing the glasses thing. (Thoughts???)

I can’t believe that I graduated from college 6 years ago this weekend.

It feels like summer and I am getting excited for summer travel plans!

I registered for a July half marathon and am hoping to PR by dropping some lbs. We’ll see!

Roasted Shrimp and Orzo Salad

This shrimp and orzo salad was just catapulted to the top of my all-time favorites.

Why, you ask? Well, cause my mom made it for me, of course! And I guess the huge chunks of feta don’t hurt, either.

This was lunch one day during my bridal shower a few weekends ago. My mom made a huge batch (like quadruple the recipe!) to feed 11 hungry women. Well, I don’t know if everyone was hungry… but I sure was, and I think I ate 4 servings. Or maybe that was the souffle the next morning that I ate 4 servings of? Oh wait, that too. There was a loooot of good food. But I certainly wasn’t the only one going back for “just one more bite” of this salad.

Now, I know I don’t post a lot of seafood on this blog, but the truth is that I eat a fair amount of it. It’s usually at restaurants, because let’s face it, I love sushi! Also, fish is often the healthiest thing on a restaurant menu. But I forgot how absolutely WORTH IT it is to cook seafood at home from time to time. This pasta salad is a prime example.

Thai Pineapple Pizza

Hello hello, and happy Cinco de Mayo! We are celebrating with Thai food. Obviously.

I mean, I already did the tequila thing, because I figure everyone celebrated Cinco de Mayo this weekend. Right? Now it’s Monday, and tequila on a Monday is probably a bad idea. Unless you’re in college, in which case you might not care what’s a good or bad idea when it comes to tequila. But if you’re not in college, Monday is the time to get back to healthy eating and all that jazz after a weekend that maybe involved a bit of tequila, but probably involved a lot more adult stuff like waking up early and running errands. So, Cinco de Mayo, adult-Monday-Thai-style. That’s what we’re doing today.
