Thai Red Curry Quinoa Soup

Hiya!

Are you surprised that I want to talk about curry today?

Prooobably not. Curry seems to be all that’s on my mind lately – in popcorn, in peanut sauce, and now in soup. What can I say? I <3 curry. And I especially <3 coconutty curry as a spicy base for a veg-filled soup.

Thai Red Curry Quinoa Soup

This soup is a mix between authentic (lemongrass, Thai basil, Thai chilies) and inauthentic (quinoa and kale). I hope you guys are OK with that – I know I am. Mostly, I wanted to use red curry as a base for a soup, but then I quickly realized that I wanted to add quinoa and kale to it. Quinoa and kale happen to be my two favorite soup additions. They add such great texture, and I love that they hold up no matter how many times you reheat the soup. (You know the same isn’t always true if you’ve used, say, noodles and broccoli before.) So curry, quinoa and kale it is! A rockstar combo, if I do say so myself.

I’m about to be one of those people that is way too excited for a Monday.

You know… the ones who are bouncing around at 8 AM and draw a dark look from you because… Monday. Monday morning. Why so cheerful?

Well, thanks for asking. It’s actually because of this peanut sauce. {Insert ear-to-ear grin here.}

I recently found myself on a quest to master a Thai peanut sauce recipe.

It started, as these things often do for me, with a restaurant dish. Specifically the peanut sauce at our go-to Thai takeout place. I am head over heels in love with that peanut sauce. They serve it as a salad dressing, as a dipping sauce for spring rolls, and as a sauce over steamed vegetables and rice. It is incredible and I bet you I’ve dreamed about it before. It’s not stretching the truth to say that I go there just for the peanut sauce.

Moo Shu Vegetables

Moo Shu Vegetables

So you guys know I have been on a kick of recreating my old favorite meaty Asian dishes with vegetables. We’ve had Cauliflower Coconut Masala and Asian Orange Cauliflower… and now, one without cauliflower! I bet you didn’t think I had it in me. But yes, today we have a vegetarian version of the Chinese takeout classic: Moo Shu Vegetables!

I have fond childhood memories of moo shu pork. Whenever my parents ordered Chinese food, we’d beg them for moo shu, but not because we liked the filling – we LOVED the pancakes. (Anyone else?!) I definitely remember rolling up the pancakes and eating them plain – no filling required. My parents would complain that we needed to save some pancakes to actually eat with the filling. {Scoff} Adults.

So naturally when recreating them, I went the opposite direction. Not only am I now all about the moo shu filling, but I stuffed it in flour tortillas out of pure laziness.

Oops.

Don’t tell.

Or actually, we’ll just blame it on those dang kids who ate all the pancakes.

Moo Shu Vegetables

Turns out? In my adult life, moo shu vegetables are pretty darn delicious, no matter how you serve them.

Muhammara Roasted Veggie Bowl

Thank you for all your sweet comments on Monday’s post. You all sure know how to comfort a girl! Even when that girl is being a self-indulgent whiner. Oops!

I’m going to take my complaining down a notch. As I think we all know, Sunday anxiety is way worse than the actual work week. So next week, feel free to give me a virtual slap if I let out a peep about my busy schedule!

Still, I appreciate Monday’s virtual hugs. You are all way too sweet, and I can’t believe my luck that we get to hang out and talk about food together all the time. Seriously!

Muhammara Roasted Veggie Bowl

We are still enjoying the double batch of muhammara I made last weekend, and this has been one of my favorite combinations: a bowl of wheat berries and roasted veggies topped with a big dollop of that rich spread. It’s not exactly earth-shattering (more like fridge-emptying!), but it’s still high on the deliciousness scale.

BBQ Cauliflower Pizza

BBQ Cauliflower Pizza

I hope you’re as happy as I am to see yet another cauliflower recipe!

I seriously can’t get enough of this stuff lately. I made Asian Orange Cauliflower for dinner last week, followed by this pizza twice this weekend. I’m officially a huge cauliflower fan.

When I say cauliflower pizza, you may assume that this is one of those gluten-free cauliflower crust deals. Not so. I’ve never tried a cauliflower crust recipe, mostly because I sure do love picking up fresh pizza dough from Whole Foods when I’m too lazy to make it myself. Given the recent cauliflower craze in my life, though, I’m sure a cauliflower crust is in my future.

But for now, it’s any kind of crust you like (feel free to double up on cauliflower!), topped with roasted cauliflower that’s been smothered in barbecue sauce. I’m relatively certain that nothing with barbecue sauce has ever come out of my kitchen before, but blogging is great for expanding the horizons like that. Also, Nate sure didn’t voice any complaints about this pizza appearing twice in one weekend, so I have a feeling the barbecue flavor is here to stay around these parts.
