Chocolate Walnut Quinoa Cookies
Yesterday I thought I was playing a sneaky trick when I asked on Facebook whether you wanted a quinoa recipe today or a cookie recipe. Usually when I do that, I’m shocked how many people choose the healthy option! But this time, a reader named Sarah saw right through me and said she wanted both. Well, in fact, that’s exactly what I was going to do either way.

Because I made quinoa cookies!

Quinoa cookies. Don’t be scared. Unless you’re scared that your inner cookie monster will come out and eat half a batch of cookie dough. In that case, you should probably run for the hills.

Three-Ingredient SunButter Cookies

Three-Ingredient Sunbutter Cookies

You may recall from my recipe fails post the sunflower seed butter cookies I tried to make last year. The ones that turned green.

Accidental green cookies, no matter how delicious they taste, are a fail. (And those ones didn’t taste that delicious, either.) But I still wanted to make SunButter cookies. Maybe I don’t learn from my mistakes? But maybe I do, because in this case I learned that baking soda was the culprit – it reacts with the chlorophyll in the sunflower seeds to cause that, um, interesting green color.

The solution was obviously to just leave out the baking soda. Enter three-ingredient SunButter cookies!

Well, I think I included my elevator pitch for these cookies nicely in the title of this post: Three ingredients. Mint meringues. Gluten-free. Oh, but did I mention they’re made with not just any mints but Andes mints?!

Nutella Pizzelle Ice Cream Sandwiches

Pizzelle Nutella Ice Cream Sandwiches

Do you know what pizzelle are?

Even harder question: Do you know how to pronounce “pizzelle”?

I thought I did… until the woman at the bakery where I bought these made it rhyme with “gazelle.” Pazelle. Huh. Or maybe she was rhyming it with “Gisele”? I’m not sure, but it really threw me for a loop. In my puzzling over the pronunciation, I hadn’t even considered that option. Some googling put me back on track, though, and I think I can now confidently say that an acceptable Americanized pronunciation is “Pete’s ellie.” And yes, all we’re going for is an acceptable Americanized pronunciation, so that you don’t stumble over the word, but can also use it in a sentence without pretentiously faking an Italian accent.

Anyway, let’s get back to the first question. What are the darn things? Well, they’re Italian cookies that look like thin waffles. They’re sweet, usually crunchy, and sometimes dusted with powdered sugar. The ones I bought were almond-flavored, but they are also commonly flavored with anise or citrus.
