Roasted Cauliflower with Yellow Curry Sauce

What’s the saying – “brown food tastes better”? I’m definitely taking that to heart with today’s recipe. Brown on brown on brown! It makes for some humble pictures, but some reeeeally tasty veggies.

This roasted cauliflower dish is another restaurant recreation, and – totally unintentionally – from the same restaurant as Tuesday’s recipe. It’s our favorite neighborhood place (Avenues Bistro on Third, if you’re in Salt Lake!) and, um, I guess we’ve been eating there a lot lately? I’ve learned to always order the special if it’s vegetarian. It’s always to die for, even if the name doesn’t sound too exciting. I mean, roasted cauliflower with yellow curry sauce – boring, right? Nope nope nope, wrong!

Thai Red Curry Quinoa Soup

Hiya!

Are you surprised that I want to talk about curry today?

Prooobably not. Curry seems to be all that’s on my mind lately – in popcorn, in peanut sauce, and now in soup. What can I say? I <3 curry. And I especially <3 coconutty curry as a spicy base for a veg-filled soup.

Thai Red Curry Quinoa Soup

This soup is a mix between authentic (lemongrass, Thai basil, Thai chilies) and inauthentic (quinoa and kale). I hope you guys are OK with that – I know I am. Mostly, I wanted to use red curry as a base for a soup, but then I quickly realized that I wanted to add quinoa and kale to it. Quinoa and kale happen to be my two favorite soup additions. They add such great texture, and I love that they hold up no matter how many times you reheat the soup. (You know the same isn’t always true if you’ve used, say, noodles and broccoli before.) So curry, quinoa and kale it is! A rockstar combo, if I do say so myself.

Yellow Curry Popcorn

Yellow Curry Popcorn

Today I have the perfect Friday recipe for you.

Perfect because it involves you, your microwave, and 2.5 minutes of your time. (Or however long it takes your microwave to pop popcorn… and not a SECOND longer, because as any kid who’s made microwave popcorn after school knows, the hardest part is not burning it to a black, stinking crisp.) Anyway, assuming you can handle that part (not gonna lie, it usually takes me two tries), this recipe then involves you, your couch, and a movie for the next 2.5 hours.

The popcorn? It won’t last that long. You might have to take 2.5 more minutes to make a second batch. (Or a third batch if you burnt one of the first two…)

I “tested” this recipe when the craving struck at about 10:30 PM on Saturday night. Anything for a blog recipe, you know? I just haaaad to.

Yellow Curry Popcorn

I posted another DIY microwave popcorn recipe on the blog back in 2012, but assuming you’re newer here, this is the deal: It turns out that microwave popcorn is actually incredibly easy to make on your own at home. You just need some lunch-sized brown paper bags, popcorn kernels, and whatever flavorings you like. Scoop the popcorn kernels (no more than 1/4 cup!) into the bag and fold the very top of the bag down once or twice. If you have a stapler and want to get fancy, you can staple the top after you’ve folded it. I don’t own a stapler, and it works just fine without it, too. Then place the bag on its side in your microwave and microwave until there is a second or two between pops. It’s just as convenient as unwrapping the plastic off a bag of pre-packaged microwave popcorn, but no need for the fake butter and other chemicals. It’s like magic!

When you can take out chemicals and replace them with curry, I would say that’s pretty much always a win.

Cauliflower Coconut Masala

One of my favorite parts of blogging is that I get to connect with so many lovely people every day. Lovely, like-mind, food-loving people like you! The food blogging community really is the best. It was a quite unexpected bonus for me when I started blogging – I had no idea how much I’d love that part of it.

One of my great food-blogging friends is Julia at The Roasted Root. Have you checked out her beautiful blog? Julia always has something clever to say, and something delicious to feed you. Something delicious and sneakily healthy, I might add. She’s pretty much the best.

So I was thrilled when Julia asked me to be one of a series of guest posts on her blog. And today is the day! I’m posting over on The Roasted Root, hijacking Julia’s space to talk about Indian food.

It’s been a while since I made you any curry or the like, so I’m pretty excited about this one. Chicken tikka masala has always been my favorite Indian dish, and I have fond memories of ordering it for takeout along with a big side of fluffy naan. And when I recently decided to make masala with cauliflower and coconut milk instead of the ol’ chicken and cream… whoa. Worlds collided. This Cauliflower Coconut Masala was born.

Green Curry Stuffed Peppers

Hello, and happy Monday to you!

Some recipes I have a lot to say about; others, not so much. This is one of the latter. The big story about this recipe is that a version of it has been on my idea list for quite some time – about a year – and when I got a massive amount of green peppers in my CSA box, I decided to finally try it out. It would have been almost irresponsible not to, you know? So… I made it.

No, of course that’s not the end. That would leave you with far too many pictures of peppers and far too little of my sass for one day.

Although maybe it’s the peppers, not the sass, that you’re after.

Lucky for you, I’m not sure I have anything too sassy to say today. More pictures of peppers it is!
