We’ve been making our way through a long list of movies to watch, and this weekend was The Five-Year Engagement with Jason Segel and Emily Blunt. Have you seen it? Maybe a bit chick flick-y for Nate, but I thoroughly enjoyed it. It was a liiiittle close to home at times, as the whole premise of the movie is that he is miserable after they move across the country for her post-doc. Had I seen it a few years ago, I probably would have been terrified to make the same move for Nate… well, more terrified than I already was! But all’s well that ends well. Our engagement is going to be a short 10 months, and I haven’t even become a sweater-knitting crossbow hunter during my time in Utah. Nope, just a running-obsessed food blogger… is that better or worse? I’ll let you decide.

Between our list of movies, Nate’s House obsession, and the World Cup going on right now, it’s shocking that our TV ever gets turned off. And I even skipped last week’s episode of The Bachelorette! That’s how you know there’s too much other TV being watched.

Speaking of The Bachelorette, have you seen this Jim Gaffigan bit about McDonald’s? Nate says The Bachelorette is my McDonald’s. I say my McDonald’s is gorging myself on peanut butter and chocolate. Or reading People magazine on the elliptical. Anyone want an update on the Kardashian wedding? I didn’t think so. That’s OK… I could have worse flaws, I think.

This salad, on the other hand, is completely virtuous. It’s got nothing in common with McDonald’s. I mean, hello – look at all that Swiss chard!

Apricot Honey Goat Cheese Spread

Happy Friday!

First of all, I have to say that I’m so glad you all love chocolate cake as much as I do. Not that I suspected otherwise… but, you know, I like bonding with you over cake. It’s kind of like a girls’ night, you know? We bond as we chat and eat chocolate together. My favorite.

Yesterday the phrase “I love you like a fat kid loves cake” popped into my head. Actually, I heard a wedding ceremony (on TV, thank goodness, not real life) where the bride included that phrase in her vows! Is it just me, or is that a little weird and… insensitive? Also, it implies that the speaker does not love cake, which I would hope to be false. Especially given the cost of wedding cakes. If you are gonna pay for a wedding cake, you better freaking LOVE that cake.

Anyway, let it be known that I love cake. Whatever that makes me, so be it!

But we are not here to talk about cake. We’re here to talk about goat cheese. Remember the time I put goat cheese on top of cake? That was awesome, and I think I’ve mentioned it in every post since. But I digress. Goat cheese. Focus.

Here is something I discovered about myself when putting together this post: Apparently I really don’t like sandwiches.

When I went to file this recipe under “Sandwiches,” I discovered that there was no such category on this site. Not only have I not posted a single sandwich recipe over the past year, but this isn’t even really a sandwich, either. It’s a tartine, toast, open-faced sandwich – whatever you’d like to call it, I’m pretty sure no man would be willing to say this is a sandwich. Hmph.

A blog with no sandwiches is a problem. One that I will remedy in the coming months.

Ohhh my goodness. There’s really nothing like it.

I have a lot of firsthand experience with portobello burgers and sandwiches that are pretty “meh.” Ordering one at a restaurant really seems to be a toss-up: it’s either mind-blowingly delicious or flavorless and underwhelming. Well, I have the antidote to flavorless and underwhelming: cayenne + goat cheese.
