Red Beet and White Chocolate Chip Ice Cream

July 5, 2013 by Erica

Red Beet and White Chocolate Chip Ice Cream

Beet lovers, this one’s for you.

Red Beet and White Chocolate Chip Ice Cream

I would not necessarily consider myself a lover of beets. I adore beets in the right time and place (and have a slew of beet recipes on this site), but I also occasionally think they taste like dirt. Needless to say, I was a little wary of trying a beet ice cream. But once the idea suggested itself, I was too intrigued not to go through with it.

As I researched beet ice cream recipes, I found that the road was paved with mixed reactions: all the way from “rude essence of beet” to “damn tasty!” I decided to follow the recipe that was declared “damn tasty,” and was quite pleased with the results. It tasted nothing like dirt, and miraculously, seemed to be exactly the right time and place for beets.

Chunky Lola Cookie Dough Ice Cream

Chunky Lola Cookie Dough Ice Cream

If you give a mouse a cookie, he’s going to ask for a glass of milk.

And if you give a mouse Chunky Lola cookie dough, he just might ask for vanilla bean ice cream.

Or something like that.

Chunky Lola Cookie Dough Ice Cream

If you’ve spent any time with me (in real life), I’ve probably fed you some cookies called Chunky Lolas. And now, even if you and I have never had the chance to hang out outside of blog-land, I’d like to do the same to you.

Honey Thyme Ice Cream

Honey Thyme Ice Cream

I am currently on an ice cream bender.

As I posted on Facebook last week, my friend Andy donated his ice cream maker to a worthy cause: me trying out this peanut butter chunk ice cream from Edible Perspective. (Thank you Andy!!!) Well, I haven’t quite worked my way up to that fantastic recipe yet (it has 15 steps!); instead I thought I’d start with something simpler.

And then I fell in love with the simple ice cream recipes, and have made, oh, 4 batches in the past 4 days.

Honey Thyme Ice Cream

I actually waltzed into a 9:00 meeting without make-up earlier this week because I got caught up churning ice cream in the morning. I didn’t realize until 8:31 that I had to be into work (20 minutes away) in 29 minutes. Oops. I hadn’t gotten dressed, brushed my teeth, or put on make-up yet. Of those three things, obviously the make-up was the one that could wait until after the meeting. But don’t worry… the ice cream got churned and lovingly stored in the freezer before I left. Priorities.

Strawberry Basil Balsamic Ice Cream Sundaes

Strawberry Balsamic Ice Cream Sundaes

I don’t mean to alarm you, but that’s not chocolate I poured on my ice cream.

It’s vinegar.

A balsamic vinegar reduction, to be exact.

Strawberry Balsamic Ice Cream Sundaes

And you know what? It tastes way better than chocolate with this sundae.

And that’s me saying that. This girl.

Nutella Pizzelle Ice Cream Sandwiches

Pizzelle Nutella Ice Cream Sandwiches

Do you know what pizzelle are?

Even harder question: Do you know how to pronounce “pizzelle”?

I thought I did… until the woman at the bakery where I bought these made it rhyme with “gazelle.” Pazelle. Huh. Or maybe she was rhyming it with “Gisele”? I’m not sure, but it really threw me for a loop. In my puzzling over the pronunciation, I hadn’t even considered that option. Some googling put me back on track, though, and I think I can now confidently say that an acceptable Americanized pronunciation is “Pete’s ellie.” And yes, all we’re going for is an acceptable Americanized pronunciation, so that you don’t stumble over the word, but can also use it in a sentence without pretentiously faking an Italian accent.

Pizzelle Nutella Ice Cream Sandwiches

Anyway, let’s get back to the first question. What are the darn things? Well, they’re Italian cookies that look like thin waffles. They’re sweet, usually crunchy, and sometimes dusted with powdered sugar. The ones I bought were almond-flavored, but they are also commonly flavored with anise or citrus.
