Race Recap: Provo City Half Marathon

May 7, 2014 by Erica

Race Recap: Provo City Half Marathon
This past weekend was a race weekend in the Foulser/Krah household! OK, the weekend may be long gone at this point, but I still need to tell you about our half marathon.

While running isn’t the focus of this blog, it’s definitely part of my life. I selfishly like sharing these race recaps so that I can look back at them later. There’s nothing to remind me how painful a half marathon is like re-reading how I felt about it just after (OK, a few days after) finishing. I hope you’ll indulge me. After all, in my real life I have to balance out all that granola somehow.

Thai Pineapple Pizza

Thai Pineapple Pizza

Hello hello, and happy Cinco de Mayo! We are celebrating with Thai food. Obviously.

I mean, I already did the tequila thing, because I figure everyone celebrated Cinco de Mayo this weekend. Right? Now it’s Monday, and tequila on a Monday is probably a bad idea. Unless you’re in college, in which case you might not care what’s a good or bad idea when it comes to tequila. But if you’re not in college, Monday is the time to get back to healthy eating and all that jazz after a weekend that maybe involved a bit of tequila, but probably involved a lot more adult stuff like waking up early and running errands. So, Cinco de Mayo, adult-Monday-Thai-style. That’s what we’re doing today.

Have I lost you yet? Just follow along… you won’t be sorry.

Seed Demon Quinoa Flake Granola

Seed Demon Quinoa Flake Granola - 7 seeds in 1 granola!
F-f-f-friday!

On the one hand, I couldn’t be happier to see the end of the workweek. I’m currently traveling for work (always exhausting, no matter how quick the trip) and am pretty excited to collapse into my own bed. On the other hand, I am a liiiittle nervous that the week is over, because tomorrow morning I’m running a half marathon. Eek!

A 7 am race is not exactly a recipe for a relaxing start to the weekend… especially when it’s an hour away and you have to catch a bus to the starting line before 5:30. AHH! However, I can’t really complain, since I’ve been looking forward to this race for months.

Seed Demon Quinoa Flake Granola - 7 seeds in 1 granola!
Can I really run 13.1 miles? I ask myself this question before the start of every long run. Can I really run 7 miles? 8? 9? 10? Week after week, the answer seems to be yes. So I guess I have to face the fact that I will be running 13 miles tomorrow.

Paloma Cocktails

April 30, 2014 by Erica

Paloma Cocktails
I’ll be honest, I went into this cocktail recipe with a bad attitude.

Mixology is not my specialty. I’ve never been too interested in booze, and pouring a glass of wine is just so much easier. Or a beer? Great, I don’t even have to mess with the cork! Nate shares my preference for wine and beer, and so there you have it. A very skimpy “drinks” section on the recipe page of this blog.

However. There was a little something called the 2013 fail post. And believe it or not, the jalapeno grapefruit margarita fail was the one I was most disappointed about. Margaritas are my cocktail of choice, and seriously, how hard can they be to make? All you have to is like… stir fruit juices together in a glass. Why can I not mix a cocktail to save my life? I needed some serious redemption after those failed margs.

Quinoa Sushi Bowl with Baked Tofu

Quinoa Sushi Bowl with Baked Tofu

Are you ready to hear about my super productive weekend?

Well, it started off super productively. It quickly devolved into napping, watching two movies and, of course, sitting on my butt in front of the TV writing this blog post. But first, I woke up at 6:30 on Saturday morning and cleaned out the fridge and freezer before Nate even woke up. What! So impressed with myself.

The cup of decaf coffee I had after dinner on Friday night? Yeah… that may have had something to do with it.
