Spelt Berry Sushi Bowl

Good morning and happy Wednesday!

I wouldn’t be so chipper (I feel morning chipperness is generally uncalled-for), but just look at all these colors. Food like this makes me happy to be alive.

(If you’re still half asleep and don’t feel like eating sushi yet… I apologize. I kind of have a thing for colorful food.)

In case you missed it, this is Pantry Week here at Coffee & Quinoa: a week of me attempting to simultaneously clean out my cabinets and teach myself to put a meal together without a trip to the store.

This dish is a random weeknight creation that truly belongs in my pantry series. Pawing through the fridge after work one night, I found some leftover veggies and cooked spelt, plus some cauliflower with only a few more days of life left in it. For some reason my sweet potato sushi bowl came to mind. I decided to go for it, but was pretty doubtful as I whipped up the dressing… an Asian dish with cauliflower and spelt, really?

Macaroni & Many Cheeses

I am loving your comments on yesterday’s pantry post! It seems that a lot of you are like me, and cook from recipes only to have to do a pantry cleanse a few times a year. On the other hand, there also seem to be many people who love to be inspired by what they find in their pantry at dinnertime. I am working my way from the former group to the latter this week!

It happens to be great timing for my pantry cleanse, because it is coooold and rainy here in Salt Lake. And although my car is about 15 feet from my door, the rain somehow still discourages me from heading out to the grocery store. I can’t complain about the rain, though, because April is one of the only times that the Salt Lake Valley actually looks green, which I love.

Oh wait… that was a lie. I can complain about the rain, and I do. For example: This morning I got to work late, had to park at the back of the parking lot and battle my way through a monsoon to get into the building, and then realized I’d left my laptop in the car. WHAT. My feet still still aren’t quite dry.

Thank goodness I live in the desert, where it rains about six days a year. You just happened to catch me on one of them.

Anyway, let’s talk about the first item on the menu, which happens to be perfect feet-warming food.

Let’s talk bulk bins.

I am a total sucker for the Whole Foods bulk bins. They are such a magical place. Three colors of quinoa, five types of lentils, chocolate covered everything, and amaaaazing trail mixes that I inevitably eat out of the bag on the way home – don’t mind if I do. On a given day, I can convince myself to buy almost any of it in the name of keeping a well-stocked pantry or trying something new.

Well, guess what? I don’t even have a pantry. (Does anyone in their 20s have an actual pantry? If so, don’t tell me about it; I’ll be super jealous.) What I have is two kitchen cabinets dedicated to pantry items. Aaaand they are bursting at the seams. Not to mention the freezer drawers I’ve packed with frozen fruits and veggies never to be heard from again.

Does anyone else have this problem?

Pantry Cookin'

The reason is that I like to follow recipes. Trying something new is all well and good, but I usually follow a recipe while I’m doing it, whether it’s someone else’s or one I’ve cobbled together ahead of time myself. And after I’ve made that delicious salad that calls for 2 tablespoons of goji berries, the other 2 cups that I bought often sit there for… a long time. Because who would buy just 2 tablespoons of something from a bulk bin? Not this girl. Come on – they’re called “bulk” for a reason.

I’m always envious of the bloggers that seem to throw together flavorful meals based on what they have lying around, but I’m a planner by nature. And I just haven’t been able to let go of the planning enough to use up what I have in my pantry.

If you’ve ever had poutine, I don’t think I’ll have to try too hard to convince you. If all you have are the visuals, on the other hand, I probably have my work cut out for me. (Do you remember the Modern Family clip where Mitch and Cam serve poutine and Jay says “Well it looks like vomit, and I’m not poutine it in my mouth.”? So grumpy… so funny.)

Homemade Pistachio Butter

Is it just me, or are pistachios everywhere recently?

I’m not sure if it’s a seasonal thing, or if the big pistachio TV ad campaign actually worked. I’m guessing the latter, because I just googled ‘when are pistachios in season’ and Google told me fall. So, way to go, pistachio marketers, getting PSY to dance with life-sized pistachios on national television somehow actually worked out for you.

Yikes.

Pistachio Butter

I’ve had pistachios on the brain recently because we had a huge bag of them at work that no one could stop eating. (They were the salt and pepper kind from Costco – so good.) Then I started noticing pistachios popping up in lots of recipes. And a few weeks ago, I was reading an article on The Kitchn – I honestly don’t even remember which one – that mentioned making your own pistachio butter. It was just a casual aside and didn’t go into detail, but it was one of those moments where everything stopped and I was like, whaaaaaat, homemade pistachio butter?! I had to know more.
